This simple cake is delicious and easy to make.
200g caster sugar
4 eggs, separated
1 teaspoon baking powder
Zest of 1 orange + juice of 2 small orange
Whisk the egg whites to form soft peaks and set aside.
Soften the butter and mix with the sugar until creamy and fluffy. Add the egg yolks, the orange zest and mix again.
Fold the flour with the baking powder alternating it with the eggs whites. Pour into a tin lined with greaseproof paper and bake in a pre-heated oven until done.
Remove from the oven but not from the tin. Squeeze the juice out of 2 small oranges and add a tablespoon of sugar if needed. Slowly pour the juice over the cake, don't use it all if you think it's too much. Allow the cake to rest in the tin for a few minutes before removing it.
