# 116 Fridays recipes: Slow cooked beef stew

A few months ago we bought a slow cooker for sale at half price, like the one below.

I'm not going to write a long post on the advantages of slow cooking but if you want to know more you can read about it here, here and here.

I love my slow cooker especially for cooking beef. After a few hours of a gentle bubbling in the ceramic pot the meat is tender to the point you can cut it with the fork and so flavoursome.



Slow cooked beef stew

Stewing beef, cut into cubes
Onions, chopped
Carrots, peeled and chopped into chunky pieces
A few slices of chorizo
Thick slice of smoked pork belly, cut into cubes
Olive oil
1/2 can of tomatoes, chopped
1 or 2 beef stock cubes (depending on the quantity of meat you're cooking)
1 bay leaf
Paprika or chilli powder

In a pan soften the onions in a little olive oil. Add the chorizo and the smoked pork belly and cook for a couple of minutes.

Add the meat and fry until browned. Add the paprika or chilli powder, the bay leaf, the carrots, the chopped tomatoes and the stock cubes. Add a little boiling water if necessary and bring to a simmer.

Transfer all ingredients into the ceramic pot and place the pot into the slow cooker base. Place the lid onto the slow cooker and cook for approx. 4-5 hours. Serve with pasta, rice or mash potato.
