# 7 Vegetable soup

Autumn and Winter call for soup at our house, homemade of course!

This one was made yesterday using only 4 ingredients: half of a butternut squash diced, 3 medium courgettes sliced, 3 medium carrots also sliced, half an onion chopped and 2 vegetable Knorr cubes for seasoning.

Cover with water and bring to the boil, then let it simmer until all the vegetables are cooked. Remove it from the heat, drizzle with a little olive oil and blend until smooth. I usually make enough to last us 2 or 3 days. Just keep it in a food container in the fridge and heat up before serving.
