A. felt ill at school yesterday so he spent the rest of day at home to recover. We watched DVDs, worked on a papier maché project for school and then he wanted to do some baking. We chose one of our favourite recipes for biscuits because they are so easy and quick to make and absolutely yummy.
A. wanted to do different flavours so we made the base dough and divided it in 2 portions adding desiccated coconut to one and chopped roasted almonds to the other.
This is the base recipe that I found somewhere on the Internet.
150 g self raising flour (or use plain flour and add a teaspoon of baking powder)
150 g porridge oats
150 g sugar
150 g butter
2 tablespoons golden syrup (I used the same amount of honey instead)
2 tablespoons milk
Preheat the oven and line a baking tray with baking parchment.
In a bowl mix the dry ingredients.
Melt butter, syrup (or honey) and milk in a saucepan and stir until well heated through. Add to the dry ingredients and mix well to combine.
Spoon onto a baking tray and shape into rounds.
Bake until golden brown. Leave to cool for 5 minutes before removing them from the tray.
