# 5 Oat biscuits with almonds and coconut

A. felt ill at school yesterday so he spent the rest of day at home to recover. We watched DVDs, worked on a papier maché project for school and then he wanted to do some baking. We chose one of our favourite recipes for biscuits because they are so easy and quick to make and absolutely yummy.

A. wanted to do different flavours so we made the base dough and divided it in 2 portions adding desiccated coconut to one and chopped roasted almonds to the other.

This is the base recipe that I found somewhere on the Internet.

150 g self raising flour (or use plain flour and add a teaspoon of baking powder)
150 g porridge oats
150 g sugar
150 g butter
2 tablespoons golden syrup (I used the same amount of honey instead)
2 tablespoons milk

Preheat the oven and line a baking tray with baking parchment.

In a bowl mix the dry ingredients.

Melt butter, syrup (or honey) and milk in a saucepan and stir until well heated through. Add to the dry ingredients and mix well to combine.

Spoon onto a baking tray and shape into rounds.

Bake until golden brown. Leave to cool for 5 minutes before removing them from the tray.

# 4

I'm so pleased with my homemade yoghurts, I've made 2 batches so far and it's really easy although you do have to wait a few hours for them to set and then a few more for them to cool but I think it's worth the wait.

Here are a couple of serving suggestions to make plain natural yoghurt more interesting:

Add a handful of raisins and chopped dried apricots and drizzle with a little honey


in a pan soften finely sliced apples with a little cinnamon, if using cooking apples you might want to add a little honey so they're not so bitter. Add this to your yoghurt and enjoy, it's absolutely delicious!

On another note, have you noticed the change to Autumn tones? Aren't they just beautiful? Autumn and Spring are my favourite seasons because of the colours and right now I'm loving all the vibrant earthy tones.

# 3

A. turned 11 yesterday and I can hardly believe how fast time has gone by. As usual he got to choose his birthday menu so we had Pancakes for breakfast and Lasagna and Chocolate cake for dinner.

# 2

It was my birthday yesterday and one of the gifts I received was a yoghurtmaker, something I've wanted for some time.

I remember my mum making her own yoghurts, simple natural ones at first but then she started being more adventurous experimenting with new flavours until she managed to make the ultimate yoghurt, a chocolate flavoured one :-)

Can't wait to try my new toy!

# 1

Creating a new blog is like moving to a new place, you feel slightly lost not knowing where to start and this is how I feel right now.

I have another blog here and if you clicked on the link and had a look around you'll have noticed it's all about one of my favourite hobbies: crafting.

I also enjoy cooking, reading, traveling and photography.

The photos below were taken last Sunday at Stowe Landscape Gardens in Buckinghamshire. We took a picnic as usual and spent the day exploring & taking pictures. The long drive there and back was really worth it.
